Olives preserved in olive oil
Olives picked when ripe, debittered, worked in brine and preserved in olive oil and maquis herbs.
Harvested from the tree, the olives offer an exceptional flavor due to the environment of the Corsican maquis, so intense that the fruit is imbued with it. The herbs of the maquis accentuate these flavors, deliciously enhanced by the olive oil with the right balance between heat and fruitiness, marked by an extreme sweetness on the palate.
